Bagel Egg Casserole Recipe

Bagel Egg Casserole Recipe

Ingredients:

  • 1 Onion, bell pepper, zucchini & squash chopped
  • 3-day old everything bagels (cut into pieces) – about 6 cups – If you can’t find 3-day old bagels, you can toast them a little in the oven to harden them.
  • 3/4 cup quartered cherry tomatoes
  • 2 Spring Onions chopped
  • 9 large eggs
  • 1 and 1/2 cups whole milk
  • 1 and 1/2 cups shredded cheddar cheese
  • Salt & pepper to taste
  • Everything Bagel seasoning
  • 6 ounces (170g) full-fat brick cream cheese, cut into bite-size pieces (you may need more- my friends love cream cheese on this recipe, so I add extra)

Recipe:

  • Preheat the oven to 375°F (191°C). Generously grease a 9×13 inch baking pan or similar size (about 3-quart) casserole dish.
  • I sauteéd the chopped veggies in extra virgin olive oil for 3-4 mins and added salt & pepper
  • Layer the chopped & sauteèd veggies & bagel pieces into the dish. Whisk the eggs, milk, cheese, salt, and pepper together in a large bowl. Pour evenly over the bagel mixture.
  • Top evenly with pieces of cream cheese and sprinkle with everything bagel seasoning, if using.
  • You can cover it with cling wrap & refrigerate for 2-3 hours or upto overnight.
  • Bake for 40-50 minutes or until the center is set and edges are golden brown. Remove from the oven and allow to cool for 10 minutes before topping with scallions (if using), slicing, and serving.
  • Cover leftover casserole tightly and refrigerate for up to 1 week.
