Chicken Paneer Quesadilla for Kids (12-Minute School Mornings)
To make a chicken paneer quesadilla on a school morning, reheat last night’s chicken until steaming, mix it with crumbled fresh paneer, a little mozzarella and chopped peppers, then fold it into a whole wheat tortilla and cook for 2 to 3 minutes a side. It takes about 12 minutes and gives roughly 26 g of protein.
School mornings need a breakfast or lunchbox that is fast, filling and something kids will actually finish. This one uses two things you probably already have: chicken left over from dinner and a block of fresh paneer. Crumbled together with a little cheese and a handful of vegetables, they turn into crisp, golden wedges that work warm at the table or packed for lunch.
The short version
- Reheat the leftover chicken until steaming hot before it goes in the tortilla.
- Paneer does not melt, so add a small handful of mozzarella to hold the filling together.
- Cook on medium heat so the tortilla crisps while the cheese melts.
- For lunchboxes, let the wedges cool for 5 minutes before closing the lid, and pack two ice packs.
What do you need to make chicken paneer quesadillas?
Everything here is flexible. Use whatever plain chicken is left over: roast, grilled or tandoori all work. Quantities make 2 quesadillas, one per child.
| Ingredient | Amount | Why it’s there |
|---|---|---|
| Whole wheat tortillas, 8 inch | 2 | More fibre than white flour, and still soft enough to fold |
| Leftover cooked chicken, shredded | ½ cup (about 80 g) | The main protein. Skin removed, gravy drained. |
| Fresh paneer, crumbled | ½ cup (about 60 g) | Adds protein and a mild, creamy bite |
| Part-skim mozzarella, shredded | ⅓ cup (about 40 g) | Melts and glues the filling together |
| Red bell pepper, finely chopped | 2 tbsp | Sweet crunch and colour |
| Sweetcorn, frozen and thawed | 2 tbsp | A flavour most kids already like |
| Fresh coriander, chopped | 1 tbsp | Optional. Skip it for picky eaters. |
| Ground cumin and salt | A pinch of each | Gentle flavour without heat |
| Butter or oil | 1 tsp | Crisps the tortilla |
For a dip, stir a pinch of salt and a few chopped mint leaves into ¼ cup of plain Greek yogurt. Mild salsa works too.
How do you make a chicken paneer quesadilla step by step?
Four steps and one pan. If mornings are tight, do step 2 the night before and keep the filling in the fridge.
1
Reheat the chicken 1 to 2 min
Warm the shredded chicken in the pan or the microwave until it is steaming all the way through. Cooked leftovers should be reheated to 165°F (74°C). The quesadilla itself only cooks for a few minutes, which is not long enough to heat cold chicken safely in the middle.
Look for steam rising from the centre of the chicken, or 165°F on a food thermometer.
2
Mix the filling 2 min
In a bowl, combine the hot chicken, crumbled paneer, mozzarella, bell pepper, corn, coriander, cumin and salt. The warm chicken starts softening the cheese, so the filling holds together as you fold.
Tip Chop the pepper very small. Kids are far less likely to pick out pieces they cannot see.
3
Fill, fold and cook 5 to 6 min
Spread half the filling over one half of each tortilla and fold it over. Heat the butter in a large pan on medium. Cook the quesadillas for 2 to 3 minutes a side, pressing gently with a spatula, until both sides are golden.
Look for golden brown spots on the tortilla and cheese just starting to bubble at the edges.
Tip Medium heat matters. On high heat the tortilla burns before the cheese in the middle melts.
4
Rest and cut 1 min
Let the quesadillas rest for 1 minute so the cheese sets, then cut each one into 3 wedges. Serve warm with the yogurt dip, or pack them for school using the steps below.
Why add mozzarella if the quesadilla already has paneer?
Paneer is set with acid rather than rennet, so it softens in a hot pan but never melts or stretches. On its own it would tumble out of the tortilla. A small amount of mozzarella melts around the chicken and paneer and holds every bite together. Part-skim mozzarella keeps the fat lower than cheddar or a Mexican blend.
Paneer still earns its place. It adds protein without much extra fat, especially if you make it with 2% milk using our low-fat paneer recipe, and its mild, milky taste suits kids who find strong cheeses too sharp.
Is a chicken paneer quesadilla healthy for kids?
One quesadilla has roughly 330 calories and 26 g of protein, plus about 4 g of fibre from the whole wheat tortilla and vegetables. For comparison, the recommended daily protein intake is 19 g for children aged 4 to 8 and 34 g for ages 9 to 13, so a single quesadilla covers a large part of a school day’s need.
| Per quesadilla (estimated) | Amount |
|---|---|
| Calories | About 330 kcal |
| Protein | About 26 g |
| Fat | About 11 g |
| Carbohydrate | About 25 g |
| Fibre | About 4 g |
| Calcium | About 250 mg |
How we estimated: USDA values for 40 g of cooked chicken breast, 30 g of paneer made with 2% milk, 20 g of part-skim mozzarella and a typical 8 inch whole wheat tortilla, plus the vegetables and 1/2 tsp of butter. Tortilla brands vary a lot, so check your label. These are estimates, not lab results.
How do you pack a quesadilla for a school lunch?
Chicken and cheese are perishable, so the lunchbox needs to stay cold until lunchtime. The USDA says perishable food should not sit at room temperature for more than 2 hours, or 1 hour above 90°F.
- Let the wedges cool on a rack for 5 minutes before closing the lid. Trapped steam is what makes a quesadilla soggy.
- Use an insulated lunch bag with at least two cold sources, such as two frozen gel packs, or one gel pack and a frozen water bottle.
- Pack the yogurt dip in its own small container so it does not soften the tortilla.
- Pack the bag right before you leave home, not the night before.
Quesadillas taste good cold, the same way pizza does, so most kids will not mind eating them straight from the box.
How long can you use leftover chicken for this?
Cooked chicken keeps in the fridge for 3 to 4 days. Tonight’s dinner can become quesadillas any morning before then. Store it in a shallow, airtight container within 2 hours of cooking, and always reheat it to 165°F before it goes into the tortilla. If you will not use it in time, freeze it within that window.
What can you swap in a chicken paneer quesadilla?
| If you want | Swap |
|---|---|
| A vegetarian version | Skip the chicken, use 1 cup of paneer and add ¼ cup of mashed black beans |
| Gluten-free | Two small corn tortillas per quesadilla. Check the label if it is for an allergy. |
| More vegetables | Add a handful of finely chopped baby spinach to the filling |
| A little spice for older kids | A pinch of chaat masala or mild tandoori chicken |
| Less mess | Roll the filling up like a wrap and toast it seam side down |

Frequently asked questions
Can I make chicken paneer quesadillas the night before?
Make the filling the night before and keep it in the fridge, then reheat it and cook the quesadillas in the morning. Fully cooked quesadillas can be refrigerated overnight and re-crisped in a dry pan for 1 to 2 minutes a side, but they are best fresh.
Can I freeze them?
Yes. Cool the cooked quesadillas completely, wrap each one, and freeze. Reheat from frozen in a pan on medium-low for about 4 minutes a side, until hot all the way through.
Will the quesadilla be soggy by lunchtime?
Not if it cools before you close the lid and the dip travels separately. Steam is the cause of sogginess, so 5 minutes on a rack makes the difference.
Can I make these in an air fryer?
Yes. Brush the outside lightly with oil and air fry at 375°F for about 6 to 8 minutes, flipping halfway. Pin the fold with a toothpick so it does not blow open, and remove it before serving.
My child does not like paneer. Will they notice it?
Crumbled small and mixed with melted mozzarella, paneer blends into the filling and tastes like mild cheese. Start with less paneer and more chicken, then shift the balance over time.
What other leftovers work?
Any plain cooked protein works: turkey, shredded lamb, or a dry chicken sabzi with the gravy drained off. Keep wet curries out, because extra sauce makes the tortilla soggy.
